Chicken Tacos

Makes 4 to 6 servings. Takes about 5 mins to prep and 10 mins to cook.

Ingredients:

  • two tablespoons taco seasoning

  • four large boneless chicken breasts (we recommend cutting each breast in half horizontally to make them into easier to cook cutlets)

  • one pack tortillas (flour or corn)

  • one-half tablespoon vegetable oil

  • Dash of salt and black pepper

Directions:

  • Coat each boneless chicken cutlet in one-half tablespoon of vegetable oil, and then coat with one-half ounce of taco seasoning and toss / mix.

  • Cook chicken breasts on medium heat, turning halfway through, and until cooked thoroughly (no pink). Cook Times Cutlets: 7-8 mins. Full Breasts: 10-15 mins.

    • CHEF’s TIP : don’t cook higher than medium heat level to keep the chicken breasts moist and tender.

  • Remove chicken from heat and let rest for a few minutes. Then shred with a pair of forks or slice with a knife as you prefer.

  • Dash with salt and black pepper to taste, then spoon meat onto warm tortillas and serve.

Garnish the tacos with your favorite toppings, such as fresh chopped cilantro, red onions, diced tomatoes, sour cream, and jalapeno peppers. Enjoy!

Make them our way! Add in:

  • 1 red bell pepper (de-seeded)

  • 1 onion (white or yellow)

  • 2 to 4 garlic cloves (minced)

  • another one-half tablespoon vegetable oil

Before cooking chicken breasts-

  • Warm oil in medium hot pan and cook the peppers and onions for 5 to 8 mins until cooked.

  • Add minced garlic and cook for 2 mins until fragrant.

  • Remove from heat and place in a separate bowl.

  • Add this mix in once you’ve cooked and shredded the chicken.
